Yummy Cold Weather Food

I made a pretty dang good roast with potatoes and carrots and onions and an awesome spinach salad this weekend.  Take a look at the yummy ingredients!

And my mom was shocked (and a little tickled) when I told her that I bought four pounds of fresh pinto beans this weekend.  Growing up, we had one dish that we could “opt-out” of at dinner.  That night, we could make a sandwich and not eat what was served.  The nights we had beans were my opt-out night.  These days, I really like them, as long as they have some ketchup on them!  I divided them into bags of two cups each, so that I can stretch them out.  I’m hoping the two cups will take care of a couple of dinners and/or lunches.

P.S.  I got 3-packs of organic tomatoes (about half the size of my fist, so about normal) at Whole Foods for $1.  Just a heads up!
